Inspired by the black bean soup served at Hotel Santa Fe in Puerto Escondido, Mexico, this delicious soup is low fat, gluten and dairy free, and the organic black beans are a good source of fiber. For a treat, add sour cream or grated cheese.

Ingredients
Organic Black Beans, Filtered Water, Organic Onions, Organic Carrots, Organic Corn, Organic Potatoes, Organic Celery, Organic Leeks, Sea Salt, Organic Spices, Organic Cilantro, Organic Garlic, Organic High Oleic Safflower And/or Sunflower Oil, Organic Black Pepper.

Directions
Shake before opening. Ovens may vary.
Microwave: Place soup in a microwave-safe bowl. Cover. Cook for 2 minutes. Let sit for 1 minute. Stir. Serve.
Stovetop: Heat soup in a saucepan, stirring occasionally.
