Mexico – 43% – Clase Azul Mezcal San Luis Potosí is made from green agave (Agave salmiana), a variety of agave native to the semi-desert slopes and plains of San Luis Potosí. The green agave used for this spirit is slow-cooked in domed masonry ovens.
