Enjoy these delicious Puppodums from Madras, which will increase in size when fried. Just like those in Indian Restaurants. They are made to a traditional recipe to bring you a tasty accompaniment to serve with an Indian meal, or simply as a tasty snack. Suitable for vegetarians.

Ingredients
Black Chickpea Gram Flour, Water, Sea Salt, Calcium Oxide, Rice Flour, Sunflower Oil.

Directions
Cooking Instructions: To Deep Fry: Heat 5 cm oil in large deep frying pan or wok until very hot (392 degrees F / 200 degrees C). (To test: drop a small piece of Puppodum into the oil, if it starts bubbling and expands immediately the oil is hot enough). Deep fry one or two at a time, holding under the oil with a metal spatula. The Puppodums will expand in 2-3 seconds. Quickly turn the Puppodum over, shake off excess oil and remove. For best results drain upright on kitchen paper. The Puppodums will become crisp on cooling.

Store in a cool, dry place.
